EGGS EGGS EGGS












Actually 5,023 eggs and counting (they add one each year) to build a giant omelette to celebrate the French Heritage of this small town....Abbeville, LA.




In 1984, three citizens of Abbeville attended the Easter Omelette Festival in Bessieres, France and were knighted the first of Abberville's Chevaliers. They returned home with the determination to bring Abberville closer to it's French Heritage by hosting an Omerlette Festival and joining the sisterhood of cities who celebrate the omelette annually: Bessiere & Frejus, France; Dumbea, New Caledonia; Granby, Quebec Canada; Malmedy, Belgium; and Pigue, Argentina. Making Abbeville's Giant Omelette Celebration a truly international festival.
Each year, foreign representatives from each of these cities are invited to be knighted as chevaliers (chefs) into Abbeville's Confrerie (fraternity).






The cooking of the omelette (actual more like scrambled eggs) takes all day from the blessing of the eggs in church to building the large fire on a bed of sand in the middle of the street. Then a special made 9ft. stainless steel skillet is put in place by a fork lift. Then the mixing of eggs & prep of skillet begins as more wood is put on the fire.






To give you an idea of how large this is...here is the recipe:
5023 eggs, 50 lbs. onions, 75 bell peppers, 4 gallons onion tops, 2 gallons parsley, 11/2 gallons cooking oil, 6 gallons milk, 52 lbs. butter, 3 boxes salt, 2 boxes black pepper, Crawfish tails and of course Louisiana's own Tabasco Pepper Sauce (to taste).





Just another unique event we came across on this trip.




We came to this town to stay at Betty's RV...which we learned about from an RV'er from Colorado who we met at the Elks in Slidell, LA. Betty's is a lot like "Cheers" everyone knows your name...and everything else which comes from the daily happy hour where everyone meets, greets and shares food from very friendly traveling RV'ers.




Short on amenities...long on socialization...that's Betty's
